18g in, 40g out, 35 s: Recipe suggestion for Bomba de Fruta by MVSM implemented with Automatic Pro. Generally, this profile can be used for fruity light roast coffees. Automatic Pro is a profile family built to automate puck saturation and extraction with clever phase stops, created by modsmthng. Automatic Pro detects when the pre-infusion has finished, allowing us to work directly with the flow value during the main extraction instead of relying on time. This has the advantage that even slightly suboptimal grind size settings can still produce the desired result, while we only need to focus on pressure during the dialing-in process. MVSM recommends an espresso recipe for their Bomba de Fruta beans of 18 g in, 40 g out in 35 seconds. Since this recommendation assumes a traditional espresso machine with a 9-bar extraction, the 35 seconds likely include a natural pre-infusion of around 5–10 seconds (before a conventional machine reaches the full 9 bars). That would leave the main extraction running at a flow rate of approximately 1.4 ml/s if we adjust the recommendation accordingly.
