Big Sur Soup

Soup recipe according to Big Sur in Shanghai. 17g of coffee at a very coarse grind size. At the course end of your usual filter grind size or coarser. Don't tamp. The recipe is ideal for ultra light and light coffee. Recipe off of red note via Lance Hedrick. You can put a screen on top of your "puck". Flow rate at around 5g/s is perfect. "Some observations. It's capable of absolutely incredible results. If you don't like tea like coffees, you will hate this though. I understand why Big Sur serves this in tea cups. But man, I pulled two shots of Basha Bekele from Sey with it and they are both solid 8.5 to 9 out of ten. 12g work really well with a 49mm basket at the same grind size that I use for 15g with a 58mm ims. I did grind size 70 on my x-bloom. I am going to do some with my A4Z tomorrow. Really curious how that will work out. I don't have any Basha left sadly. I did an auto stop at 20 secs to prevent accidental overflow. You shouldn't build any pressure at all so your shots should be done at around 17-18 secs. Change this when you want to pull longer ratios. Also, if you do smaller doses, like the 12 I talked about, you obviously need to adjust the grams out. I use 60 in that case."
